Keto cookie recipes don’t get any easier than these two ingredient keto peanut butter cookies. With only 2g net carbs per cookie and no added low carb sweetener, these are the perfect keto peanut butter cookies to help with quicker fat loss on keto!

How to make 2 ingredient peanut butter low carb cookies

To get started, check off your ingredient list: one cup peanut butter and one large egg.

Regarding the nut butter, you have a choice with this keto peanut butter cookies recipe. If you prefer a smooth cookie, choose creamy peanut butter. If you’d rather have a little extra crunch to your cookie, grab a jar of crunchy peanut butter. I prefer to use an organic peanut butter over jars generically labeled as natural peanut butter. I just don’t enjoy extra toxins in my low carb diet treats.

Even though I’m a huge peanut butter fan, I have some days where I’m sensitive to peanut butter all together. These days I typically make this same recipe with almond butter instead. It’s the same cookie, just a sweeter taste.

Be adventurous. There’s no need to stick with only classic peanut butter cookies. I’d love to hear if you choose a completely different nut butter all together and how that turns out.

Another quick note: while sugar-free peanut butter is your best bet when it comes to keto recipes, it’s not always easy to find. Do your best to find a peanut butter that has no more than 6-8 grams of carbs per serving, and you should be just fine.

Once you choose your peanut butter, preheat the oven to 350 degrees F. It’s easier to work with a room temperature egg, so set that out on the counter.

Combine Keto Peanut Butter Cookie Ingredients

Add the peanut butter and egg to a large bowl. Mix together on high speed with a hand mixer.

Here’s a quick tip: if you really miss the sweetness in this keto cookie recipe, add 1/2 tsp of vanilla extract to the bowl prior to mixing. This will add another small touch of sweetness in keto recipes.

Of course, this will take your 2 ingredient peanut butter cookies to 3 ingredients – so it’s up to you just how dangerously you want to live this keto life.

Next, roll the peanut butter cookie dough into 1 inch balls of dough. Place them on a parchment paper prepared baking sheet. You can use a small cookie scoop to create the balls, or just your hands. Things will get sticky, so be sure to have a paper towel handy if you go this route.

After you wash your hands, press each ball down with fork marks in a criss-cross pattern. Bake in the oven for 10-15 minutes, or until the edges turn golden brown. Once the cookies are cooked in the middle, remove them from the oven. Do not move them to a wire rack since they will be very crumbly. Allow them to cool on the baking sheet as is.

When it’s time to store the cookies, be very careful when transferring. Even crispy cookies will be very crumbly at this point. Once they’ve had time to set, store leftover cookies in an airtight container.

If the cookies still crumble, you can still eat the crumbles with a spoon. Try adding homemade whipped cream for a cookies and cream type of treat.
