Slimming World Cheese Sauce

You probably want to know what the story is behind this Slimming World Cheese Sauce. Or my own history with Slimming World.

Firstly, I joined Slimming World originally in 1994 as a fat teen that ate too much cheese and chocolate and never exercised.

The weight soon fell off me and I went to target. I then returned to Slimming World after the birth of my first child and again the weight fell off.

But that was long before you could look online for Slimming World recipes and the SW recipes of then, are not as good as they are today.

As I have become a kitchen gadgets food blogger and become more and more obsessed with my kitchen gadgets, the more new healthy recipes I have learnt.

Slimming World cheese sauce is a key example of that. A recipe I have altered over the years until I found my perfect recipe and this is it.

I am also a cheese sauce addict and love the idea that I can bring you a cheese sauce that can be either low syn or syn free, that you can also make at home and help you on your Slimming World Journey.

Best Slimming World Cheese Sauce

Well the chef hubby said it was the best Slimming World cheese sauce he had ever tried, when I poured this cheese sauce over his cauliflower.

Yet this cheese sauce is free of:

  • Butter
  • Flour

You don’t need to make a roux. You can dump the ingredients into a soup maker, or a pressure cooker and it comes together so fast.

It also works as a replacement for a LOT of your favourite Slimming World sauces such as:

  • Slimming World White Sauce – Just want a plain white sauce you can use for quick dinners? Then make our cheese sauce without cheese and you have a yummy creamy basic sauce recipe.
  • Slimming World Parsley Sauce – Are you making a Slimming World fish pie? Then make our cheese sauce, don’t add cheese and add garlic and parsley instead.
  • Slimming World Cheese Sauce For Lasagne – This syn free cheese sauce is ideal for lasagne. Make a batch of it and load it onto your lasagne. Then any leftover can go towards a batch of cheese sauce for the freezer.
  • Slimming World Cheese Sauce For Pasta – The same rule can apply to any pasta dish. Such as making a SW macaroni cheese. Just mix cooked pasta with this delicious cheese sauce and you have a SW pasta bake.
  • Slimming World Cheese Sauce For Steak – You can also use this sauce as a basis of a cheese sauce for steak. But I would recommend adding in some extra seasonings to make it taste more like a steak sauce. Such as some mushrooms and some peppercorns.

You could also use this to make nacho cheese sauce, white wine sauce, or whatever you are cooking. Its kind of a sauce that works well with a lot of different recipes.

Slimming World Cheese Sauce With Butternut Squash

Yes you heard it right! The secret ingredient is that this Slimming World cheese sauce is made with butternut squash.

That sounds crazy doesn’t it? Especially when most Slimming World cheese sauce recipes use quark. Well I have to say that I find quark really boring and it doesn’t get me excited over my Slimming World meals.

But instead of a cheese sauce made just with quark you swap it for butternut squash instead. Or if you don’t like butternut squash you can use either pumpkin, carrots or cauliflower. As any of those vegetables do the trick.

What they create is a creamy hidden vegetable sauce and then you simply add cheese to it.

How Do I Make Slimming World Cheese Sauce?

In simple terms a Slimming World cheese sauce is the combination of:

  • Creamy cooked blended vegetables
  • Creamy add ins
  • Grated cheese that melts

Those are the basic three things that make a cheese sauce. Or even better, make our Slimming World butternut squash soup and then reserve some leftovers for a base for a cheese sauce.

  • For my creamy vegetables – first choice is always butternut squash as it does the best job. But carrots is a close second. Or sometimes I use some butternut squash and some carrots.
  • Then for the creamy add ins – you have a few syn free foods to choose from. You could make your Slimming World cheese sauce with quark, natural yoghurt or another favourite is light Philadelphia.
  • Then for the grated cheese – whatever favourite grated cheese you love will work well. I usually use light mature cheddar. That is because it is lower calorie, you can then add more of it and its stronger on taste, so you don’t need as much.

Low Fat Cheese Sauce

I understand that even though I love Slimming World, not everyone else does. Well you be pleased to know that this cheese sauce suits a whole range of diets.

The best thing about it is that it is flourless and butterless making it ideal for weight loss. It is a low fat cheese sauce and it is a low calorie cheese sauce.

It is also fantastic for low carb diets and WW.

Notes

Quantity. Even though the cheese quantity might seem high for SW or WW, note that this is enough cheese sauce to do two big family dinners. So, imagine that you are dividing the cheese allowance between 8 for your serving size. Also note, that if you want more mature cheddar then you can swap the Philadelphia for quark or fromage frais.

Swaps. Mix and match whichever cream you want. You can use quark, fromage frais, natural yoghurt, or light soft cheese. You can also add in a little milk if the sauce is too thick. As well as this you can use whichever cheese you want.

Freezer. Load into freezer containers once cool. Then freeze for up to 3 months. You can also freeze your leftover lasagne that you have made with the sauce.

FAQs

How to make cheese sauce thinner? ›

You can add milk to thin it out a bit, and make sure to stir it as it melts to keep the melting even and prevent it from clumping.

What kind of cheese is best for sauce? ›

One of the best types of cheese for making sauces is raclette. It has high moisture and fat content, making it great for melting. Traditionally, melting the cheese is done tableside with pans, an electric grill, and a knife or scraper. After melting the raclette, drizzle it over charcuterie, potatoes, and pickles.

Why add flour to cheese sauce? ›

Starch (such as all-purpose flour, cornstarch, or potato flour) will keep the cheese from curdling. If using all-purpose flour, add it to the mixture before the cheese; it needs to be cooked for a few minutes to remove the starchy taste.

How to make a cheese sauce that doesn't break? ›

For dips, you'll want to use a tablespoon of cornstarch per pound of cheese, then add at least five ounces of evaporated milk. After that, you can use more evaporated milk to thin out your dip as much as you need.

How do you make homemade cheese sauce thicker? ›

Flour or cornstarch can both thicken a liquid. In a small separate bowl, mix a tablespoon of either flour or cornstarch with 2 tablespoons of cheese sauce until the mixture is smooth. Add the mixture back to the milky cheese sauce, and stir until combined and desired thickness is achieved.

What can I use if my cheese sauce isn't thickening? ›

Use Flour and Water

Combine 2 tablespoons flour with every 1/4 cup cold water and whisk until smooth. Add the mixture to your sauce over medium heat, and continue to stir and cook until you've reached your desired consistency.

What cheese melts the best for cheese sauce? ›

Cheeses with more moisture and lower melting points make for mouthwatering, creamy cheese sauces. Cheddar is one of the most popular choices, but Swiss and Gruyère are also terrific options.

What is a fancy name for cheese sauce? ›

A Mornay sauce is a béchamel sauce with shredded or grated cheese added. Some variations use different combinations of Gruyère, Emmental cheese, white cheddar or even Parmesan cheese. A Mornay sauce made with cheddar is commonly used to make macaroni and cheese.

What happens if you don't put flour in cheese sauce? ›

Cheese Sauce without Flour FAQs

Making the cheese sauce with cornstarch instead of flour allows you to reheat it without it getting lumpy and dry. After you make it, just store it in an airtight container in the fridge.

Why doesn't my cheese sauce taste cheesy? ›

Cream is heavy and mutes the flavor of cheese. Add a dash of garlic powder, dry mustard, and smoked paprika to the roux while it cooks. Honestly, this combo tastes cheesy even before you add the cheese.

Why does my homemade mac and cheese taste bland? ›

Try adding a little more salt first, because that might fix it. If the problem was the cheese you use doesn't have much flavor, then try adding some other flavors, such has mustard or hot sauce. The next time you make it, try to find some more strongly flavor cheese, or adding more cheese.

Can I use evaporated milk to make cheese? ›

I've made mozzarella from scratch using dried milk (using rennet) in the past and I've made ricotta cheese using evaporated milk. (And yes, I also have freeze dried mozzarella cheese in my storage.)

Why won't my shredded cheese melt in sauce? ›

One of the most common ways to help cheese melt smoothly is to add starch: this is a process that works in sauces like mornay, or nacho cheese sauce. Starches and other thickeners will physically impede fat molecules from joining up into larger droplets, as well as making the water phase of the cheese more viscous.

Why use evaporated milk in queso? ›

Evaporated milk helps to keep this dip extra creamy as it's thicker than other dairy products thanks to its lower water content. Another incentive to use evaporated milk is that it helps prevent the dip from congealing– especially when combined with cornstarch.

How to make cheese more liquidy? ›

For every cup of grated cheese (about 3 ounces) you will need a quarter cup of water and a half-teaspoon of sodium citrate. Heat the water to a simmer, add the sodium citrate to dissolve, then whisk in the cheese of your choice a bit at a time until you get a smooth and creamy mixture.

How do you make thick cheese thinner? ›

To achieve thin, uniform slices from a block of cheddar cheese, a cheese slicer or mandoline can be effective tools. A wire cheese slicer with an adjustable thickness setting allows for precision. Alternatively, a mandoline with a sharp blade can produce consistent slices.

What to do if your mac and cheese sauce is too thick? ›

Side Note: Unlike its baked counterpart, stovetop macaroni and cheese is much easier to fix when too dry. If it looks too thick on the stovetop, splash in a few tablespoons of milk while still on the heat. Be careful to add a little at a time to avoid loosening the sauce too much or splitting it.

Can I add milk to thin cheese sauce? ›

Stir in cheese until melted. Add additional milk for a thinner sauce if desired. Season with salt and pepper to taste.
