If you have ever been to Rocco’s Tacos Mexican restaurant, you know that the guacamole is one of the best parts of going there.

It’s the best guacamole, they prepared tableside and it is full of fresh ingredients and has a kick of heat to it. Also try my Salsa quemada recipe. So fresh and spicy delicious!

This easy homemade recipe is quick to make with a few ingredients and tastes just like the way Rocco’s Tacos makes it. You can serve it over top steak or chicken fajitas, quesadillas, nachos, or burritos. Or enjoy it simply as a delicious party appetizer with corn chips.

Recipe ingredients

Since this is a no-cook recipe, all the flavors come from a few fresh ingredients. If possible, choose high-quality ripe ingredients for the best guacamole dip!

Avocados. Ripe, soft but firm when gently pressed. You will need 2 medium avocados for this recipe.

Salt. Just a pinch or to taste.

Tomato. Cherry tomatoes, Grape tomatoes, or Roma tomatoes are commonly used in guacamole recipes, but feel free to use whichever variety you like!

Red Onion. Red onion has a mild and slightly sweet flavor. It’s great to use in no-cook recipes.

Cilantro. A staple in guacamole recipes. Adds a slightly citrusy and herby flavor to this flavorful dip.

Jalapeno. Use with or without the seeds depending on your spice preferences.

Lime. Fresh lime is the best and really helps to make the avocados taste like guacamole.

How to make Rocco’s tacos guacamole

Start with washing all of your vegetables. Cut an avocado in half and take the pit out. Scoop it in to the medium size bowl and mash with fork. If you like is chunky then don’t mash avocado completely. Leave some chunks.

Finely chop tomatoes and red or yellow onion. Add to avocado. Chop cilantro. Roll lime on the table, cut in a half and juice right into the bowl. Add salt to taste.

If you like your guacamole spicy add some chopped jalapeno. You can remove the seeds to make it more mild if you want.

Simple and fresh appetizer

This recipe doesn’t include any spices or seasonings because they can easily overpower the fresh flavors of the avocados and other ingredients.

My homemade guacamole recipe isn’t made with fancy ingredients or special tools. Just whatever you already have in your fridge and pantry, so you can make this quick dip whenever you want!

How to pick the perfect avocado

Picking the perfect avocado is the key to delicious guacamole. If they are too hard it can be difficult to smash them and your guacamole won’t be as creamy. Too soft and they can taste mushy and a little spoiled. Here are a few tips to keep in mind when choosing a ripe avocado.

  • Look for darker-colored avocados. When picking out avocados in the grocery store look for ones that have a dark green to almost black-colored skin. If the skin is a bright color it is usually underripe.
  • Soft but firm when pressed. When gently pressed the avocado should feel slightly soft with a firm texture, not in any way mushy. If your finger leaves a dent, it is probably overripe.
  • The skin shouldn’t have any blemishes. Look for fruit that doesn’t have any bruises, dark spots, or dents.
  • Look under the stem. If the avocado has the stem on top of the fruit, remove it and see if the flesh underneath has a bright green color, which is a good sign that it could be ripe.

If you have avocados that are too hard to use for guacamole, try storing them in a paper bag for a few days to ripen them. When stored in a cool dark environment, hard avocados will be perfectly fine to use in no time!

To speed up the ripening process even more, add an apple or banana to the paper bag along with unripe avocados. They will get ripe in no time!

Another great way to keep avocados green is to cover guacamole with a thin layer of oil on top. It will also create a layer between avocados and air. Before serving just pour the oil away.

Store guacamole in the fridge for up to 3 days. You can also freeze it for up to 3 months.
